Chai, also known as masala chai, is a blend of black tea, milk and sugar that’s incredibly popular in India. It’s often flavoured with spices, too – and it’s this version that has become popular in Britain too.
As is so often the case with spice blends, every chai recipe is unique. We created our Taylors of Harrogate house chai using the spices we love the most – a rich, aromatic and warming blend that pairs beautifully with tea. And milk and sugar too, if you like, though we made sure it’s also delicious black and unsweetened.
A key source of inspiration was our tea buyers’ frequent visits to our suppliers in India, where they typically stay for a few days on the estates with those suppliers and their families. They’ll drink plenty of chai when they’re there, and no two families’ chai recipe will taste the same.
For this recipe, cinnamon and liquorice root bring sweetness, ginger root provides warmth, and cardamom lends an almost citrussy note. It all comes together with the soft, smooth flavor of vanilla.
They’re joined by a blend of the very best Rwandan and Assam teas, chosen to complement rather than compete. They’re just fragrant and punchy enough to stand up to all those heady flavours but not so much that they distract – providing a proper platform for those spices to sing.
