Ingredients
Coriander, Salt, Paprika, Garam masala (Coriander, Cinnamon, Cumin, Ginger, Cloves, Cardamon, Black pepper), Turmeric, Ginger, Dry garlic, Dried fenugreek, Cumin.
Preparation
1. Cut onion (1/2) and green bell pepper into 1/2 inch chunks.
2. Cut chicken (500 grams) into bit-sized pieces and marinate with coconut milk (1/2 cup
or 150 ml), lemon juice (1/2), SPICE PACK 1, onion and the pepper chunks for 15 minutes to overnight. Follow the same steps with the vegeterian options (Paneer or Tofu).
3. Finely dice the remaining onion (1 and 1/2). In blender, blend the tomatoes (3 medium) into a smooth sauce (350 ml or 1.5 cups). Unsalted canned tomatoes works great.
Cooking the dish
1. Preheat the oven to 400 F and bake the marinated chicken for 25 minutes until cooked.
2. Heat oil (2 tbsp) in a pan on medium high heat and fry the diced onions until translucent. (About 2 to 3 minutes)
3. Now add the blended tomato sauce (350ml), ketchup (4 tbsp, Optional but recommended), SPICE PACK 2 and mix well until the gravy starts to bubble.
Note: Ketchup may not sound authentic, but it is used in many mordern North Indian classic dishes.
4. Adjust the Heat Level to your liking by adding HOT CHILI PACK. Tikka masala is versatile and works well at all spice levels.
