Preparation
1. Cut chicken breast (1 kg) into bite sized pieces and marinate with plain yogurt (1 cup) and
SPICE PACK 1 for 60 minutes to 24 hours in the refrigerator. You can marinate the chicken in
coconut milk as well.
Do the following before making the gravy in step 2:
2. In a blender, puree tomatoes (6 to 8) into a smooth sauce (3 cups or 750 mL). Whole unsalted canned tomatoes such as San Marzano are a great substitute.
Cooking the dish
1. Preheat oven to 400 F and bake the marinated chicken in a deep tray for 25
minutes, until the chicken is cooked. Line the tray with aluminum foil for easy clean up.
NOTE: A clear yellow liquid from the yogurt will come out. You need to discard this before adding
the chicken to the gravy as instructed in step 7.
*Traditionally the yogurt is hung overnight, but it's not necessary as long as the yellow liquid is discarded.
2. Heat a large pan on medium high and toast the cumin seeds in SPICE PACK 2 for 15 seconds.
3. Now melt the butter (3 tbsp).
4. Next add the blended tomato sauce (750mL or 3 cups), SPICE PACK 3, sugar (1/2 tsp)and mix
well until the gravy starts to bubble.
5. Turn off the heat and add cream or regular coconut milk (125 mL or 1/2 cup) to thicken.
6. Adjust the Heat Level to your liking by adding HOT CHILI PACK This butter chicken is best seved mild or medium.
