White Quinoa.

Quinoa Fried Rice

Ingredients: (2-3 portions)

1 cup quinoa.

1 tablespoon sesame oil, and more for garnish.

1 large onion, diced.

2 cups diced carrots and frozen peas.

2 cloves garlic, minced

2 tablespoons soy sauce

3 large eggs, beaten

Finely sliced green onions, for garnish


1. In a medium saucepan, cook quinoa according to instructions. Once cooked, season with salt and fluff with a fork to separate the grains.

2. In a large skillet over medium heat, heat oil. Add onion, frozen vegetables and cook until tender, 8 to 10 minutes. Add garlic, soy sauce and cook for an additional minute. Crack the eggs and scramble them, 1 to 2 minutes.

3. Stir in the cooked quinoa and fry for 3 minutes.

4. Drizzle with sesame oil, gamish with green onions, and serve.
