Ingredients: Organic pumpkin seeds and oil, Celtic Sea Salt®.
Pumpkin Seed Oil and Butter is extremely versatile for baking (at oven temperatures below 325°F/163°C, with the moisture keeping the inside temperature under 212°F/100°C).
1/4 cup (60ml) Omega Nutrition Coconut Oil1/2 cup (120 ml) Brown Sugar, firmly packed1 Medium Egg, beaten1/2 tsp (t ml) Vanilla1/2 cup (12 ml) Omega Nutrition Pumpkin Seed Butter1 cup (240 ml) All Purpose Flour, unsifted1/2 tsp (2 ml) Baking Soda1/2 tsp (2 ml) Sea Salt
In a mixing bowl, cream Coconut Oil and Sugar until light. Beat in Egg and Vanilla. Blend in Pumpkin See Butter. In another bowl, mix together the flour, baking soda and salt. Stir gradually into Pumpkin Seed Butter mixture until well blended. Shape cookies or use a cookie cutter for desired shape. Place on un-greased cookie sheet
Bake at 375°F for 12-15 minutes or until brown.
1 cup icing sugar (the white powdery sugar)1 tablespoon light corn syrup2 tablespoons water8-10 drops food coloring (more or less for desired color)
Stir icing sugar, corn syrup, and water together. Stir in food coloring to desired color. This icing must be stirred each time you use it. If it is not stirred before each use it will dry with a clumpy look instead of a solid clean color.
