Summer Vegan Potato Salad

Potato Salad is a staple with any Summer picnic or gathering. With recipes spreading across the globe, it is easy to get lost with which  version to create. Which is the best? Tough to say, but certainly your family recipe will be hard to top! 

Healthy Planet has put together a simple, easy and healthy version of the wildly popular Potato Salad. Substituting traditional Mayonnaise with Veganaise, Healthy Planet opens the doors for everyone including your Vegan friends to enjoy this classic. Ingredients

5lbs multi colored new potatoes 

1 cup veganaise (sold in store at all Healthy Planet locations)

¼ cup dijon mustard

2 tablespoons extra virgin olive oil

2 teaspoons celtic sea salt

1 diced red onion

dill sprigs for garnish

finely chopped dill and parsley for garnish

pepitas for garnish

pinch of ground black pepper 

 

Instructions

Always clean your vegetables before preparing. Always Scrub potatoes under cold water prior to cooking. In a large pot, boil water and add a pinch of salt to the water. Once the pot starts boiling, add your potatoes. You are looking for them to cook long enough to slide a fork into and remove it easily. 

In a large mixing bowl, add your veganaise, dijon mustard, extra virgin olive oil, diced red onion. Mix thoroughly and add salt and pepper to taste. This will give you the dressing for the salad. 

Once your potatoes have cooled off and are room temperature, cut in half. Don’t worry about cutting into perfect sizes, the different sizes give it a rustic look! Add your potatoes once are diced to the mixing bowl and toss the dressing and potatoes till they are all evenly coated. Before adding to your favourite servine bowl, taste. Add a touch more salt and pepper if needed.
