Vegan Almond Cheese Recipe

Ok...Vegan Cheese? Really? Ya...we know, it may sound crazy, but it is real, and it is AMAZING.

The Organic, Vegan and Heath and Wellness lifestyle movement has been picking up major steam the last few years and with it has been the evolution of Vegan, Raw and Vegetarian meals featuring alternatives to traditional meat and cheese meals. With that being said, we are currently OBSESSED with this Vegan Cheese Recipe which we are using on EVERYTHING!

Super easy and super simple, the Vegan Almond Cheese we are going to show you will flip the cheese game on it’s head. 3 easy steps and you will have an amazing vegan cheese to use for whatever, whenever.

Directions:

1. Your first step is soaking the Almonds overnight. We always recommend using an organic, raw unsalted almond like these! ( product ). Organic is the preference, but not required. What is required, is the almond being raw and unsalted. Once your almonds are in hand, you want to soak them in cool water overnight. Place the almonds in the water till they are completely covered and let sit in the fridge or on a counter top overnight. The following day, simply take a few minutes to remove the skin which is an easy and fast process. (we don’t blame you if you sneak a few to snack on while skinning them)

2. Now the fun begins. Pull out your VitaMix (or food blender) and get ready to make the magic happen. Add your fully drained almonds, fresh garlic cloves, lemon juice, nutritional yeast, salt, pepper and olive oil. Slowly add our extra virgin olive oil throughout the blending process.

3. Blend your mixture into a creamy smooth texture while stopping periodically to push down any build up on the inside of your food processor. Once you have your desired creaminess, check the taste and add any ingredients you think is lacking for balance. Salt and pepper for taste, the nutritional yeast for a bit more cheesiness, lemon juice for a touch more zing.

And there we have it… fast, easy, creamy, delicious, vegan almond cheese. So many ways to enjoy this vegan treat, all of them leaving you feeling like you just had the real thing. Add some freshly chopped herbs to add a bit of herbaceousness, drizzle it with honey for a bit of sweetness added, use it as a foundation for an amazing Vegan Lasagna, the options are endless. Either way you have it, you have created a fantastic, healthy, vegan alternative to….let’s be honest, something we all need in life…..CHEESE!

Ingredients:

2 cups raw cashews

2 cloves garlic, minced (2 cloves yield ~1 Tbsp)

2 medium lemons, juiced (2 lemons yield ~1/4 cup or 60 ml)

Water (to soak almonds)

2 Tbsp nutritional yeast

1/2 tsp sea salt

1/2 tsp ground pepper

2 Tbsp xtra virgin olive oil
