Summer Cherry and Basil Bruschetta

Summer is meant for picnics in the yard, sailing trips on the lake, strolls through the park and relaxing in cottage country.  Enjoying warmer temperatures with friends and family is a rite of passage for all of us. The one trick with entertaining during the Summer Months? A solid spread of finger foods and snacks to keep everyone slightly less buzzed off the Sangria! Keeping the conversation and laughs flowing is easy when you lay out our Healthy Planet Summer Bruschetta!

Bruschetta an incredibly versatile appetizer with Italian Origins. Check out how Healthy Planet transforms traditional Bruschetta with a few seasonal ingredients that will surely leave your friends and family asking for more! 


Ingredients 

1 cup heirloom cherry tomatoes

1 cup fresh cherries, pitted and finely chopped

3 cups fresh strawberries, hulled and finely chopped

¼ cup packed fresh basil leaves, minced

¼ cup fresh mint leaves, minced

3 tablespoons finely chopped red onion

1 fresh baguette

2 tablespoons EVO

Reduced balsamic reduction for garnish


Instructions

Preheat your oven to 420F and slice your baguette on the bias (at an angle). One the baguette is sliced, lightly brush the side of the bread that will be facing up with your EVO (extra virgin olive oil). Place onto your baking sheet and toss in the oven. Check every few minutes and take out once you have toasted the bread and left with a crunch. Make sure not to burn, this will permeate throughout the all the flavors!

Remove the stems and top ends from the strawberries and cherries, make sure to remove the pits from the cherries as well! Once the fruit vegetables  have been prepped and washed, take your tomatoes, red onions, pitted cherries and strawberries and dice them. No need to make them all perfect, different cuts will give you a rustic look!  Rinse your herbs, dry and chiffonade (chop) them, laying them aside. 

In a large mixing bowl, combine the diced vegetables and fruits, ½ your herbs,  balsamic vinegar, remaining olive oil, salt and pepper, stir thoroughly. Taste the mixture and add salt if needed. This should be a light mixture of dressing to ingredients. 

Once the baguette has cooled, grab your favourite serving dish and have some fun! Space the baguettes evenly and add the Bruschetta salsa on top. Just enough for a solid bite of both bread and salsa! They are meant to be finger foods! To garnish, find your favourite Balsamic Reduction and drizzle, topping off with the rest of your chopped herb mix!
